Heart-Shaped Hot Chocolate Bombs

These heart-shaped hot cocoa bombs are made with sugar-free chocolate chips and sugar free cocoa mix (keto friendly).  But, you can totally substitute with any kind of chocolate chips and cocoa mix you like.  I used a silicone, heart-shaped mold by Baker Depot and bought it from Amazon.  This makes wide/large heart-shaped cocoa bombs.  So, you will need a wide mug to fit these bombs in.  The major time saver is using my Wilton Candy Melting Pot.  This pot comes with two silicone pots which make it super-easy to melt your chocolate and candies separately.  I love it because it melts everything perfectly and cleanup is easier. 

Here’s how to make it:  (makes about 3 cocoa bombs)

INGREDIENTS: 

16 ounces of chocolate chips (I used Hershey’s sugar-free)

 Cocoa mix (2 Tablespoons of hot cocoa for each bomb) (I used Nesquik sugar-free brand)

Marshmallows (optional)

12 ounces of milk (or more depending on your mug size) x 3

OPTIONAL: 

Wilton Candy Melt pot

Red Candy Melts (I used Wilton)

White Candy Melts (I used Wilton)

Candy sprinkles

Vegetable Shortening (Crisco)

INSTRUCTIONS:

Add 8-12 oz of the chocolate chips into your desired heating pan ( I use Wilton Candy Melting Pot)

Once the chocolate is melted, paint it on the silicone molds making sure to capture the sides of the mold and the base. 

Leave some melted chocolate in the pot on low/warm setting to use as an adhesive later to seal the cups together

Place it into the refrigerator and allow it to cool for up to 5 minutes

Remove from fridge and carefully push from the bottom and each should detach.

Then, fill 3 chocolate hearts with 2 tablespoons of hot chocolate.

Next, add marshmallows to the three chocolate hearts

Take each empty chocolate heart and paint on some melted chocolate unto the edges and then quickly and carefully apply to top of the filled chocolate heart. 

Let the sealed chocolate hearts sit.

Optional:

Melt your candy melts (optional: mix a teaspoon of vegetable shortening into candy melt mixture for a smoother texture) and pipe unto your completed chocolate bombs and add sprinkles as desired. 

How to enjoy your cocoa bombs: 

Warm your milk to steam level not boiling level. 

Place the Hot chocolate bomb in your mug.

Pour over with the steamed milk.

Watch your heart-shaped cocoa bomb do its magic and enjoy! 

Keto Grinch Pancakes

If you’re wanting some fun, super-easy Keto pancakes this is it!  I must tell you that the pancakes are not from scratch.  I know it may be cheaper to make it from scratch, but,
“ain’t nobody got time for that!”  So, I used “SWERVE SWEETS” Pancake & Waffle Mix.  I bought this from Barons Market for $7.99.  However, I did make the Keto stabilized whipped cream frosting from scratch.  You can use regular whipped cream, however, regular whipped cream collapses after a few minutes.  Stabilized whipped cream hold up well for hours! 

Ingredients:

Pancakes:

5 eggs

¾ cup and 2 tablespoons of milk

3 tablespoons of oil

Green food coloring

Neon green food coloring

Whipped cream frosting:

1 cup of powdered erythriol (I used swerve)

1 teaspoon of vanilla extract

2 cups of heavy whipping cream

1 teaspoon of unflavored gelatin (I used knox gelatin)

How to make the Keto Grinch Pancakes (yields 20 pancakes) :

  1.  Follow instructions on box as indicated for batter
  2. Add  a few drops of neon green food coloring and then green food coloring to batter until you have the desired green color
  3. Heat your griddle to medium heat (I adjusted the temp of my griddle to 250 degrees)
  4. Spray your skillet or griddle with cooking spray
  5. Pour about ¼ cup of the green batter into the pan (I use a batter scoop)
  6. After you see a few bubbles, go ahead and flip it over
  7. Allow the pancake to cook through on the other side and then transfer to plate
  8. Make your whipped cream frosting
  9. Pipe your whipped cream frosting to pancakes
  10. Add Christmas decorative sprinkles to your liking

How to make the Easy Keto stabilized whipped cream frosting:

  1.  Add 2 cups of cold heavy whipping cream to large mixing bowl
  2. Add 1 cup of powdered erythritol for baking
  3. Add 1 teaspoon of vanilla extract to bowl
  4. Beat these ingredients together until fluffy
  5. Add a teaspoon of unflavored gelatin to three teaspoons of water in bowl and let it sit for a few minutes
  6. Warm your gelatin mix in microwave for 10 seconds and then stir
  7. Let gelatin mix cool off for about a minute
  8. Add gelatin mix to whipping cream in batches while beating the whip cream mixture in between batches
  9. Beat until you have stiff peaks ( when you lift the beater out of the bowl the whipped cream stands straight up)

I started creating my own cakes because I wanted extravagant cake designs for my children’s events but did not want to spend hundreds of dollars for it. I started out making cakes from YouTube video tutorials. My hubby saw how much I enjoyed cake decorating and gifted me a “Wilton’s Cake Decorating Kit Course 1”. I signed up for the beginner’s Cake decorating class at my local Michaels store and earned my certification in Cake Design. I completed all the advanced cake design courses and then began my cake creation journey.
